Monday, on twitter, there was talk regarding the classic kid snack “ants on a log”. Although I am not a kid anymore, I still pack this classic snack for lunch on a regular basis because it is healthy (in moderation). Another bonus is that the peanut butter (or almond butter) is one of those foods that sticks with you for awhile {so I’m not hungry 20 minutes later}.

Ingredients~

5 Stalks of Celery (washed and dried)

1/2 cup Peanut Butter (I enjoy crunchy!)

1/4 cup raisins (if you do not like black ants {raisins} try red ants {dried cranberries} )

Directions~

Cut your celery stalks in half, generously spread on peanut butter, and sprinkle the tops with ants (raisins, dried cranberries {you can even try dicing up apricot or adding banana chips – the possibilities are endless!} ).

Are you {or your kiddos} allergic to peanuts? USE FAT FREE CREAM CHEESE!

Happy Snacking!

Last week, my nephew Trey told me he wanted hot dogs and Parmesan cheese for lunch. This was my inspiration for this week’s kid friendly recipe – Pig in a Blanket. You could easily make this recipe for lunch or dinner. It is super quick and easy.

PIG IN A BLANKET

Ingredients

1 can refrigerated crescent rolls (like Pillsbury)

4 hot dogs

shredded cheese (I like to use Cheddar)

ketchup

mustard

Directions Preheat oven to 375 F.

Separate crescent roll dough into 8 triangles. Take hot dogs and cut each on in half crosswise. Place each hot-dog half on the wide end of the crescent roll and roll it up. Sprinkle hot-dog rolls with cheddar cheese (sometimes I roll the cheese up with the hot dog inside the roll)

Space the hot-dog rolls evenly on a baking sheet lined with parchment paper. Bake approximately 13-15 minutes until the rolls are brown and flaky. Let cool for a few minutes before serving with ketchup and/or mustard (These even go great with ranch!).

Enjoy!

Camberley

My Inspiration
