Homemade Peppermint Oreos<br />
2 boxes Devil&#8217;s food cake mix<br />
4 eggs<br />
2/3 cup vegetable oil<br />
Frosting:<br />
1 (8ounce) package cream cheese, softened<br />
1/2 cup (1 stick) butter, softened<br />
4 cups powdered sugar<br />
1 teaspoon peppermint extract<br />
sprinkles or crushed candy cane for decorating<br />
green or red food coloring</p>
<p> Directions:<br />
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.</p>
<p>In a large bowl combine the cake mix, eggs, and oil with a mixer. The batter will be very stiff. Pinch of pieces of batter and roll into 1 inch balls. Place 1 inch apart on prepared cookie sheets and flatten slightly with fingertips. Bake for 8 to 10 minutes. Remove immediately from the cookie sheets with a spatula and cool on a wire rack.</p>
<p>In a small glass bowl, combine the cream cheese and butter until completely blended. Gradually add in the powdered sugar and peppermint extract and mix until the icing is smooth. Color frosting green or red if desired. Spread half of the cookies with icing and top with remaining cookies.</p>
<p>Roll in sprinkles, crushed candy canes, or just leave them plain.<br />
Store in the refrigerator in an airtight container or resealable plastic bags.<br />

			<content:encoded><![CDATA[<p>Another reason why this time of year is so wonderful.  The stores put out their Toasted Coconut Marshmallows and they are divine!  As we speak my 2 year old is ripping the bag open with his teeth.  Awesome.<br />
Here is a simple twist on Rice crispy squares that is a must try this season.  Go buy yourself a bag and trust me, you won&#8217;t be disappointed.<br />

<p>3 tbsp. butter<br />
40 Toasted Coconut<br />
6 Cups crisp rice cereal<br />
(I add about a teaspoon or two of pure vanilla)<br />
You can also drizzle with chocolate if you&#8217;d like.<br />
Melt butter in large saucepan on low heat.  Add marshmallows; cook until marshmallows are completely melted and mixture is well blended stirring constantly.  Remove from heat</p>
<p>Add cereal immediately; mix until well coated.  Press into greased 13.9 inch pan.  Cool completely.<br />
Cut into 24 squares. </p>
<p>As I typed this, Grady has managed to open the bag and is on #4.  He hasn&#8217;t been this quiet all day.  I&#8217;m such a good mom.</p>

			<content:encoded><![CDATA[<p><strong>A recovering child</strong>.  One week down.  Hopefully just a few more days left.  Grady has been such a little champ.  He&#8217;s had some really good days, some not so great days, very bad nights and has only thrown up once and it wasn&#8217;t blood.  Yeah!  Today is an even better day than the others.  He only had one dose of pain medicine last night and asked for pancakes this morning and even ate them all.  Little triumphs make for a great day.  Here are some pictures to describe our week.  </p>

<p style="text-align: left;">According to Johnny &#8211; the anesthesiologist made little Grady a dog balloon animal, tied a balloon leash around it and said &#8220;Grady, let&#8217;s take the doggy for a walk&#8221;.  Happily, Grady complied.  Then, our little Darth Vadar walked that balloon animal right into the surgery room like a champ!</p>

<p>Giggles. I was just reading US online and thought &#8220;why do they always quote celebrities like that?&#8221; And, &#8220;why do they have to put their ages next to their names? All. The. Time.&#8221;  Weird.</p>
<p>Anyways, it&#8217;s happening. <a href="http://www.fancyhouseroad.com/2010/05/11/potato-throat/" target="_blank">Mr. Potato throat</a> is going to get those nasty tonsils out.  No more Darth Vadar jokes, no more stinky breath, no more choking, no more sleep apnea and no more &#8220;What&#8217;d you say, mom?&#8221;.  In addition to a nasty throat, poor Grady has had fluid in his ears for months and we just can&#8217;t get rid of it!</p>
<p>So, after $200 in co-pays and 3 specialists later &#8211; we are doing it. The same doctor who, 28 years ago, put tubes in Johnny&#8217;s ears will be doing the surgery.  She will be removing Grady&#8217;s tonsils, adenoids and putting in ear tubes.</p>
<p>Here is a picture of G-Man.  <em>Obviously happy waiting to be seen by one of the 3 docs who&#8217;s name we won&#8217;t mentioned.</em> We waited in this waiting room for 1.5 hours. <em>This is also where I picked up my nasty cold/sinus infection that lasted 3+ weeks. Argh!</em></p>

<p style="text-align: left;">Everyday I have been writing down things I need to get done, even though the surgery is still two weeks away. I&#8217;m a planner. If the date is set for something, I have everything planned out ASAP! Clothes packed, snacks in little baggies, and usually an itinerary/list for the &#8220;babysitter&#8221;.  I&#8217;m glad I have such supportive family members. Everyone has already stepped up and asked where they can help and believe you me, they will. <em>Keighley, your guest room is already set up and ready for you! Ha Ha!</em></p>
<p style="text-align: left;">Right now, my list includes items like:</p>

<div style="text-align: left;">&#8220;Cami can take Trey to preschool Friday morning and pick up&#8221;</div>

<div style="text-align: left;">&#8220;Can Trey stay the night at G-Deb&#8217;s Thursday night?</div>

<div style="text-align: left;">&#8220;Who will be taking Trey to his Sat. am baseball game?&#8221;</div>
</li>
</ul>

<p>Oh, by the way, did I tell you that Grady has to stay overnight at Desert Banner Hospital? Yep.</p>
<p>Have I mentioned -  when I asked if Grady will have his own room that night, they said they &#8220;we&#8217;re not sure, it depends on how crowded it is.&#8221;</p>
<p>Did I tell you &#8211; when I asked for a bed for Preggers Muah, they said, &#8220;oh will you be staying the night too?&#8221;. Duh! My son is 2. She then told me they have a recliner. Ah yes, the old recliner. My husband knows this chair all too well. He never slept in it while I had my babies. He&#8217;d go home to be a bit more comfy. Lucky me, I handled the first night with a newborn, alone.  <em>Sigh!</em> I can&#8217;t wait to sleep on a nasty old leather recliner with my pregnant, uncomfortable self.</p>
<p>The sacrifices we mothers make.</p>
<p>If you can look past the beauty of my MIL and the adorableness of my newborn baby, Grady, then you may see said lovely purple reclining chair. Looks comfy doesn&#8217;t it? NOT!</p>

			<content:encoded><![CDATA[<p>Hello Bella Readers,<br />
I know it has been several months since my last post.  I apologize.  This pregnancy has truly taken it&#8217;s toll on my energy level.  I&#8217;m practically a zombie all day long.  I do what I have to do and then I turn into a vegetable.  I blame the heat.  I&#8217;ve been hot for 6 months.  Fall/Winter can not come to AZ faster.  Because of these awful conditions my face has been paying for it.  My acne is off the chain bad news right now.  If I get a blemish it will not go away, it lingers and then discolors my face.  It&#8217;s a sad story so I won&#8217;t continue on.  I want to share with you something I found the other day while window shopping with my little dude.  Yes, you can window shop in Arizona if you do it at Dana Point where there is an Anthropologie, Z Gallery, Philosophy, Bath and Body works, Apple store, etc.  If there was a Gap this would be the best place on earth!  As I walked by Philosophy they had some Samples of their new &#8220;facial Peel&#8221; to try.  I took one, okay, I took two.  I tried it a few nights ago.  The two step facial peel was AMAZING!  I have never felt anything like it before.  After washing it off my face it didn&#8217;t feel like my own skin.  For 3 days it has felt so smooth and soft and CLEAR!  Well, a little more clear than it has in months.  So refreshing, I can&#8217;t wait to use the peel again.  Oh and I swear my huge brown spot looks a little smaller.  Definitely going on my wish list.  If you are near a Philosophy store go ask for a sample. Oh and DO NOT feel weird about asking for samples.  Even if they snub you like they did me, they have tons of samples and that is what they are made for.<br />
