Link to Weigh In

Last week, Michael and I both had doctors appointments. I got some prescriptions filled and left with an aching bum while Michael got his blood drawn. (I am convinced his blood results are going to come back with something horrific like a hypothyroid or mononucleosis. wink.) Due to Michael’s crazy work schedule we couldn’t make it a lunch date and we went on different days; sigh** it could have been so romantic.

While we were driving in the car on Saturday, sipping on sodas and listening to really cheesy country music, Michael randomly turned to me and asked me to GUESS how much he weighed. You see, I don’t allow scales in our home because they are Evil and the doctors office was the first time Michael had been weighed in months. Not wanting to offend or say something I would regret later I replied, “I have NO idea, how much?” This lead to him telling me he was 10lbs overweight and now weighed ______! (I have left out the number in respect for Onion)

Conversation quickly turned to workout regimes and diet plans.

A few minutes passed and I decided I would do what ANY good wife would do… I was going to add salt to the wound.

 

Me: I totally agree diet and exercise are the way to go! Just don’t crash diet.

Michael: Yeah, I need moderation.

Me: Sooooooo……. Guess how much I weighed at the doctors office.

Michael: Um, 128. I guess around 128.

Me: -silence-

Michael: Am I right?

Me: still silent… just contemplating.

 

THOUGHTS I AM CONTEMPLATING: So he thinks I have gained weight. I must look like I’ve gained weight… interesting.  128 lbs is a great weight and in NO way do I think it’s a big number HOWEVER, Michael has always known that my normal weight (at least for the past 4 years) has ALWAYS been ____lbs. I have not gone above or below that weight in 4 years! I obviously look like I have put on significant poundage. HA. I did this to myself…. and to think I was going to rub it in his face that I’ve LOST weight UNINTENTIONALLY. How am I going to make my original plan of ‘adding salt to the wound’ work now- he completely changed the game.  Damage.

Me: So I obviously look like I’ve gained weight huh. I mean, you did just guess quite a few pounds heavier than my normal weight.

Michael with very large ‘crap eyes‘: Oh well, aren’t you about to “start” soon?

Me: Nice try.

Michael: I don’t know why I guessed 128 actually.

Me: Really…… that’s strange because you have always known I weigh ____.

Michael: Hehe yeah. I totally got myself into a mess here.

Me: I actually LOST 3 lbs but it’s good to know you think I look BIGGER. So where do I look heavier?

( I just couldn’t let it go. I really wasn’t offended but I can never pass by a chance to make him cringe.)

Michael: You don’t look bigger.

Me: Well you guessing I weighed 128 says otherwise.

Michael: Your boobs. Your boobs are bigger.

Me: Wow, you officially shoved your foot further into your mouth by saying “boobs”. Congratulations.

Michael: I love your boobs!

Me: You know I hate big boobs.

Michael: I DONT KNOW WHY I SAID 128! I. AM. So. SORRY.

Me: I’m just trying to make you feel bad. I don’t care.

Me: I’m not the one wanting to lose 10 lbs…..  you are.

I win.

I would just like to say that I HATE conversation breakdowns like the one I just did above. I apologize.

Link to Healthy Falafel

 

Now that I’m back to eating NO meat, I’m constantly looking for recipes that suit Dallan and Moi.  Recently, I’ve found a passion for falafel.  I love the consistency of falafel.  I love the spices in falafel.  Falafel, falafel, falafel! 

Since I’ve been craving falafel ALL – THE – TIME, I decided it was time for me to find a recipe (rather than break the piggy bank).  Instantly, I noticed that most falafel is fried (Grrrreat – I’ve been eating fried falafel all this time. FOILED!) so I was on a mission to find healthy falafel.  I stumbled on a recipe that axes the deep fryer, Thank You Allrecipes.com.  Here is my version of Bette’s recipe.

Healthy Falafel Recipe

HEALTHY FALAFEL

 

Ingredients

  • 1/3 cup finely chopped onion
  • 1 (15 ounce) can garbanzo beans, rinsed and drained
  • 1/4 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1/4 teaspoon baking soda
  • 1 tablespoon all-purpose flour
  • 1 egg, beaten
  • 1 Tablespoon olive oil
  • Pita (I used Wheat Flatout Flatbread)

Directions

  1. Get out a large oven-safe skillet. Add 1/2 Tablespoon olive oil and turn heat to medium.  Once oil is hot, add onion.  Saute until the start to turn translucent.  Remove onions from skillet and set aside.
  2. Place garbanzo beans, parsley, garlic, cumin, turmeric, salt, pepper, and baking soda in a food processor. Process until the mixture is coarsely pureed. Mix garbanzo bean mixture and onion together in a bowl. Stir in the flour and egg. Shape mixture into four large patties and let stand for 15 minutes.
  3. Preheat an oven to 400 degrees F (200 degrees C).
  4. Heat remaining 1/2 Tablespoon of olive oil in the oven-safe skillet over medium-high heat. Place the patties in the skillet; cook until golden brown, about 3 minutes on each side.
  5. Transfer skillet to the preheated oven and bake until heated through, about 10 minutes.
  6. Place falafel on warm pita with: tzataziki, romaine, tomato, pickle, et cetera.

Serves 2-3 people
