Tonight at our annual Gingerbread House contest my mom asked that one of us girls try on the bridesmaid dress. She has finally completed the ensemble (we think!) and wanted to see it all together. Immediately, all four of us girls started debating who should try it on and why. Of course everyone’s main excuse was they had just eaten too much and wouldn’t fit into the dress.  These excuses then led to all of us discussing the holiday weight we have managed to pack on since Thanksgiving. As soon as I got home I decided to research Christmas/Holiday themed Salads. {Yes, I am one of those people who thinks all salads are healthy…} I came across this interesting recipe on allrecipes.com and thought I would share. I don’t know how healthy it is, however it got fabulous reviews…

Christmas Cinnamon Pear Salad

Ingredients

  • 3 (16 ounce) cans pear halves in juice
  • 1 (2.25 ounce) package cinnamon red hot candies
  • 1/4 teaspoon red food coloring
  • 6 leaves butterhead lettuce

Directions

  1. Drain the liquid from the cans of pears into a saucepan. Add red hot candies to the juice. Cook over medium heat, stirring constantly, until the candy has dissolved. Stir in the food coloring, remove from heat, and allow to cool.
  2. Place the pear halves in a deep bowl. Pour the liquid over the pears, cover, and refrigerate overnight. You may want to stir a couple of times to evenly distribute the color. Serve pear halves cold on top of a leaf of lettuce.
